Our Take Two Spiced Peach & Apricot Chia Pudding is a healthy, delectable summer snack. The creaminess of Take Two Barleymilk perfectly complements the fresh, juicy peaches and the aromatic spices used in the recipe. This recipe also incorporates a variety of textures — from the tapioca-like chia pudding, to the soft peaches and chewy apricots, to the crunch of the granola. Barleymilk contributes protein and calcium, and chia seeds are a good source of protein, fiber, and healthy omega-3 fatty acids. In other words, this is a sweet snack you can eat in one sitting, and feel absolutely great about!

- 1/2 cup Original or Vanilla Take Two Barleymilk
- 2 tbsp chia seeds
- 1 1/2 tsp monkfruit sweetener
- 1/2 cup fresh peaches
- 2 tbsp dried apricots (diced)
- 1 pinch each of cardamom, cinnamon, and clove
- 1/2 cup granola
- (Optional) Sprig of fresh mint
Cooking Instructions

Step 1
Combine Take Two Barleymilk, chia seeds, and monk fruit sweetener and mix well. Let sit 2-3 minutes and stir again to ensure there is no clumping.

Let the pudding set in the refrigerator for 1-2 hours or overnight.

Chop fresh peaches into about 1/2” pieces and combine with diced apricots.

Sprinkle cardamom, cinnamon, and clove into fruit and mix well.

Once chia pudding is set, spoon half into a glass, then layer half of the granola, followed by half of the spiced fruit. Repeat to make two layers.

(Optional) Garnish with a sprig of fresh mint.
