Take Two Soft Baked Oatmeal Bars

These soft-baked oatmeal bars take winter breakfast to the next level with nutritious bananas and nut butter for flavor and that boost of energy you need in the morning, AND protein and fiber that will help sustain you until lunch!

These bars are soft and fluffy and can be served warm or cold. Your choice, if you want to pour milk over them or not. We suggest topping with sliced bananas or some of your favorite berries.

Ingredients

Dry Ingredients

  • 1 1/2 cups rolled oats (Bob's Red Mill)
  • 1/2 tsp. baking powder
  • 1 1/2 tsp. cinnamon
  • 1/4 tsp. nutmeg

Wet Ingredients

  • 2 overripe bananas
  • 1/2 cup nut butter (Ground Up PDX's Chunky Almond, Cashew + Coconut Nut Butter)
  • 1 Cup Take Two Chef's Blend Barleymilk
  • 1/4 cup maple syrup (365 Organic Golden Maple Syrup)
  • 1 tbsp. vanilla extract (365)
  • 1 "flax egg" (Bob's Red Mill Egg Replacer)
  • Optional: add 1/2 cup of your favorite nuts or fresh or dried fruits

Cooking Instructions

  1. Step 1

    Preheat oven to 350 degrees.

  2. Step 2

    Combine oats, baking powder, cinnamon, and nutmeg in a bowl.

  3. Step 3

    In a separate bowl, mash bananas with a fork until smooth.

  4. Step 4

    Add nut butter, Take Two Chef's Blend Barleymilk, maple syrup, vanilla extract, and flax egg to banana bowl and mix well.

  5. Step 5

    Combine wet and dry ingredients.

  6. Step 6

    Transfer to an oiled 9"x 9" baking pan or FINEX 8" skillet.

  7. Step 7

    Bake 30-40 minutes, or until a toothpick comes out of the center clean.

  8. Step 8

    Let rest at least 5 minutes, and serve warm or at room temperature.

  9. Step 9

    Refrigerate leftovers and use within 3-5 days. Alternatively, store in an airtight container and freeze.
