Take Two Cinnamon Rolls

Ingredients

Dough

  • 3/4 teaspoon salt
  • 3 cups bread flour, plus more for dusting
  • 1/4 cup butter, melted
  • 2 flax eggs, room temperature (2 tbsp of Bob's Red Mill flax meal + 5 tbsp water)
  • 1/4 cup granulated sugar
  • 1 (1/4oz) package of rise yeast
  • 3/4 cup + 1 tbsp of warm Take Two Unsweetened Original Barleymilk (110 degrees F)

Filling

  • 2/3 cup dark brown sugar
  • 1 1/2 tbsp ground cinnamon
  • 1/4 cup butter, softened

Cream Cheese Frosting

  • 1/2 tsp vanilla extract
  • 3/4 cup powdered sugar
  • 3 tbsp plant-based butter, softened
  • 4 oz plant-based cream cheese, softened

Cooking Instructions

  1. Step 1

    Prepare flax eggs and set aside. warm milk to 110°F. Pour into a large bowl, sprinkle yeast on top, mix and let sit for a few minutes. Add sugar, flax eggs, melted butter. Mix to combine and form dough.

  2. Step 2

    Knead the dough for 8 minutes using a mixer or your hands, forming a ball. If too sticky, add a tbsp of flour.

  3. Step 3

    Transfer dough to an oiled bowl, cover with plastic wrap and a towel. Allow to rise for 1.5 hours or more, until doubled in size.

  4. Step 4

    Transfer dough to a floured surface and roll out into a 14x9 inch rectangle. Spread softened butter over the dough.

  5. Step 5

    In a small bowl, mix brown sugar and cinnamon. Spread on top of buttered dough and rub in.

  6. Step 6

    Tightly roll up the dough, starting at the long side. When fully rolled keep seam side down and cut into 1-inch pieces. *approx. 15

  7. Step 7

    Place cinnamon rolls in a 9x13 baking dish that’s lined with parchment paper. Cover with plastic wrap and a towel, let rise again for 45 minutes.

  8. Step 8

    Preheat oven to 350°F. Remove towel and plastics wrap, bake rolls for 20-25 minutes, or until just slightly golden brown.

  9. Step 9

    Let cool for 5-10 minutes. While cooling, beat together icing ingredients. Spread over cinnamon rolls and serve immediately. ENJOY!
